A process that has been known for a hundred years is suddenly of great interest to the food industry, particularly those producing ground beef and chicken. Why? Outbreaks of food poisoning traceable to major suppliers prompted regulations to eliminate salmonella and e-coli and the USFDA has approved irradiation of ground beef and chicken. Litigation is likely if suppliers do not demonstrate steps towards better food safety.

Major meat and poultry suppliers are forming alliances with manufacturers of the food irradiation equipment. There are 21 companies currently supplying equipment that could be used. How do you choose what is appropriate? You need to become familiar with your company’s options, and quickly. What will be the effect on your company’s food, the workers, the environment and the bottom line?

Food Irradiation offers a solution….but how do you implement it. Gamma or electron? Do they both do the same job? How many MeV, kW or Curies do you need? Rhodotrons® or linacs? S-band or L-Band, CW TW or SW? And does it matter to you? Are there new technologies just about to emerge? The equipment is technically sophisticated, costs more than a million dollars and must be integrated into existing supply lines. .

It is difficult to compare one option with another when you are new to the technology.

Processing costs can vary from $0.01-$0.10 per pound depending on the nature (thickness) of the food treated and the throughput. Modeling the costs for your particular plant requires a full understanding of the technology, capital and operating costs.
